DIY Pinapple Cake

Pineapple cake is Taiwan's most famous confectionery. Typically it’s a small square(or rectangular)-shaped pastry with a sweet and tangy pineapple filling inside. It's not only popular in Taiwan, but recently a specialty store has also opened a branch in Japan. So far I’ve been quite happy enjoying store-bought pineapple cakes, but I was also curious about a home-made version. So I searched for a recipe from the web and gave it a try.


In Taiwan, pineapple fillings often include winter melon. I used to think that 100% pineapple filling was more delicious, but when I made it myself, I realized that winter melon can make filling denser and easier to handle. The taste of winter melon is

so subtle that it does not interfere with the flavor of pineapple at all.


The recipe itself is not so difficult, though it takes a long time to cook the filling. In the end, I figured it’s not something that I’d like to try often, but the taste came out pretty good.
